Dutch Oven Braised Chicken Thighs

Ingredients:

– 4-6 bone-in, skin-on chicken thighs
– 1 large onion, diced
– 2-3 cloves garlic, minced
– 2 carrots, peeled and sliced
– 2 ribs celery, sliced
– 2 cups chicken broth
– 1 tablespoon fresh thyme leaves
– 1 tablespoon fresh rosemary leaves
– Salt and pepper, to taste
– 2 tablespoons olive oil

Instructions:

1. Heat your Dutch Oven to medium heat.
2. In your Dutch oven, heat the olive oil over medium-high heat.
3. Season chicken thighs well with salt and pepper.
4. Place chicken thighs in Dutch oven skin side down and cook for 5-6 minutes, until crispy and golden brown. Flip and repeat on the other side. Don’t overcrowd the pot; work in batches if necessary.
5. Remove chicken from Dutch oven and set aside.
6. Add the onion and garlic to the Dutch oven and cook for 2-3 minutes until translucent.
7. Add the sliced carrots and celery and cook for an additional 2-3 minutes to soften.
8. Add the fresh thyme and rosemary and stir to combine.
9. Pour in the chicken broth and bring to a boil.
10. Return the chicken thighs to the Dutch oven, skin side up, and spoon some of the vegetable mixture over each piece.
11. Cover the Dutch oven with its lid, and transfer it to the preheated oven.
12. Bake the chicken thighs in the Dutch Oven for 45-50 minutes, or until the chicken is cooked through and the veggies are tender.
13. Remove the lid from the Dutch oven, and cook for an additional 10 minutes until the chicken skin is browned and crisp.
14. Serve the chicken thighs immediately with the veggies and pan juices spooned over the top.
